Chamomile and Honey Cookies
These cookies are perfect for your afternoon or evening cuppa.
The soothing chamomile and sweet honey will have you feeling relaxed and rejuvenated.

Ingredients
150 g (1/3 pound ) softened butter
½ cup (4 oz) brown sugar
½ tsp vanilla essence
1 tbs honey
1 free range egg
1 ¼ cup (1/3 pound) self raising flour
1/3 cup chamomile flowers (or 6 chamomile tea bags)
Method

Preheat oven to 150C (300F) and line a baking tray with grease proof paper and spray with oil.

Crush the chamomile flowers with your fingers into a bowl (or open the tea bags and pour in a bowl) and set aside.

Cream butter, sugar and vanilla essence until light and creamy (1-2 minutes). Add the honey and egg and mix lightly to combine.

Add the flour and chamomile and mix lightly until it forms a soft dough.

Drop teaspoons of mixture on the tray, allowing room for dough to spread. Flatten each spoonful with a fork that has been dipped in water.

Place in the oven for 12-14 minutes.

Allow to cool and serve with your favourite tea and sit back and mindfully savour the sweet taste!
